| Mint and lemon cooler |
Summers have only just started in Mumbai. But if you step out, it already feels peak season. And when you return home or office dont you wish someone could just serve you that cool drink. Let me treat you today with a tasty, rejuvenating but simple 'Lemon Cooler' that can also be made well in advance. Most importantly in a Jiffy.
This is a common cooler in most of the households especially during summers. All you need is lemon juice, some sugar and some salt. To give a nice flavour I will be adding some mint (pudina) leaves as well which has innumerable health benefits. Mint gives this cooler a subtle fragrant aroma and a beautiful light green color.
Mint and lemon cooler
Servings : 6 ( medium glasses)
1/2 cup fresh lemon juice
1/2 cup fresh mint leaves
3/4 cup sugar
1 ltr cups water
10 - 12 ice cubes
1 tsp salt (optional)
1.Wash mint leaves thoroughly
2.Crush the ice cubes in the processor for a minute
3.Add lemon juice, fresh mint leaves, sugar and 2 cups of water and blend it into a fine liquid
4.In a serving jar pour the the remaining water and stir in the blended liquid
5.Adjust ingredients as per taste
6.Serve immediately
The final taste should be sweet and sour. Bit tangy.
Tips
* If you wish to prepare this ahead of time, you can omit usage of ice while blending. Prepare the cooler, keep it in the fridge till you wish to use it. While serving add ice to it.
* If you dont like ice, you can omit it altogether but make sure you use chilled water while blending and keep it in the fridge for a while before serving
* If you have pestle and mortar use it to crush mint leaves instead of in the processor. It will instantly give out minty aroma. Then add these crushed leaves to the final liquid and stir it for 2-3 mins. Then keep it in the fridge to chill
